The whole recipe, scaled
Scaled to 1× of the tested batch — published yield 7 to 9 pints.
- 8 lb pickling cucumbers
- 6 cups vinegar, 5% acidity
- 8 cups water
- 1¼ cups canning or pickling salt
- ¼ cup sugar
- 2 tablespoons whole mixed pickling spice
- about 3 tablespoons whole mustard seed (2 teaspoons to 1 teaspoon per pint jar)
- about 14 heads of fresh dill (1½ heads per pint jar), or 4½ tablespoons dill seed
Soak the cucumbers overnight in 2 gallons of water with ¾ cup of the salt; drain before packing. The brine takes the other ½ cup.

Vinegar means 5% acidity — the bottle's label says "5% acidity" or "50 grain". Salt means canning or pickling salt: iodized table salt can darken pickles and cloud the brine.

Why the ratio is locked — and why rounding leans stronger
A pickling recipe is not a brine plus suggestions — it is one tested whole. The work behind each NCHFP recipe checked that this much 5% vinegar, this much water, this much produce, packed this way and processed this long, ends up acidic enough all the way through the jar. Scale everything together and that finding still covers you. Change one part — weaker vinegar, a splash more water, extra onions — and it does not.
That is why there is no custom-ratio box on this page, and never will be. The calculator multiplies; it never re-balances. And when kitchen rounding has to nudge a number onto a measuring cup, it only ever nudges toward more vinegar or less water — the brine can round a touch stronger, never thinner.
Frequently asked questions
Can I enter my own vinegar-to-water ratio?
No — and that is the one feature this page will never grow. NCHFP pickle recipes are tested as a whole: the vinegar, water, salt, sugar, and vegetable amounts together are what make the finished jar acidic enough for a boiling-water bath. Change one part and the testing no longer covers your jar. This calculator multiplies a whole tested recipe up or down, which keeps every ratio exactly where the testing put it.
Why does the vinegar have to be 5% acidity?
Because the tested recipes assume it. Distilled white and cider vinegars are usually sold at 5% — the bottle's label says "5% acidity" or "50 grain" — but some bottles on the same shelf are weaker, sold for salads or cleaning. A weaker vinegar means a weaker brine than the one that was tested. Check the label, and never dilute vinegar beyond what the recipe itself calls for.
Can I use apple cider vinegar instead of white?
Yes, as long as its label says 5% acidity — cider vinegar gives a mellower flavor and a darker pickle, white vinegar keeps them bright. What you cannot use is homemade vinegar or anything unlabeled: unknown acidity means an unknown brine, and no way to know the recipe's testing still applies.
What's special about canning and pickling salt?
It is pure salt — no iodine, no anti-caking agents. Iodized table salt can darken pickles and cloud the brine, and flake salts like kosher measure differently by volume, so a cup of one is not a cup of another. The recipes here were tested with canning and pickling salt; measure with that.
Why doesn't this page use the usual water-bath altitude chart?
Because these recipes publish their own altitude tables, in coarser steps (0–1,000 ft, 1,001–6,000 ft, above 6,000 ft) — and a recipe's own table always wins over the general chart. Enter your elevation above and the process time comes straight from the tested recipe's table, with no in-between guessing.
Why does the batch size stop at 4×?
Practicality, mostly. A boiling-water canner only processes one load of jars at a time, so past 4× you are canning several loads anyway — and cucumbers that sit salted for hours while they wait lose their crunch. Run back-to-back batches instead: every batch keeps the tested ratio, at any batch count.
I'm a few cucumbers short — can I stretch the brine with water?
No. If you come up short, pack fewer jars and keep the brine exactly as the recipe states — leftover brine can go down the drain far more cheaply than a diluted batch can go wrong. Never add water beyond what the recipe calls for: the ratio is the safety.
